I can cook!

So, here I am sitting in the same recliner with Addi waiting for her to go to sleep. It may be awhile...But I have to share this recipe that I found on Our Best Bites. I love that blog!! They have really easy down to earth recipes that call for things that I normally have on hand. This is what we had for dinner tonight. No pictures, I don't think about it until all food is gone and nothing looks pretty anymore.


Lime chili rubbed steak

1 t chili powder
1 t granulated garlic or garlic powder
1/2 t cumin
1/2 t coriander
1/2 t oregano
1/8- 1/4 t cayenne pepper*
3/4 t salt
1/4 t black pepper
1 lime (about 2 T lime juice)
1-2 lbs flank steak, or other good grilling cut. I used t-bone cause that is what I had

Juice the lime in a small bowl. Add spices and stir to combine. Some limes have more juice than others. If you find you're a little short on lime juice, just add a teaspoon or two of extra virgin olive oil to stretch it out.Place the steak in a shallow dish and pour the spice mixture on top. Use your hands to massage it in there. Let it sit for 15 minutes. During that time you can preheat your grill. Place meat on hot grill (bbq is best.) When steak is finished, remove from grill and let sit for 5 minutes before cutting into it. Slice in strips against the grain.

Creamy Lime-Cilantro Dressing

1 pack (1oz) Hidden Valley Ranch Dressing Mix (regular or buttermilk)ignore directions on the packet
1C mayo
1/2 C milk (or buttermilk depending on which packet you buy)
1 lime
2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C green salsa
*hot sauce to your taste

Place milk, mayo, and ranch mix in a blender. Juice the lime in there too, you should get about 2T juice. Toss in the garlic, cilantro and green salsa. Blend 'er up. Sample it and add hot sauce to taste. Make it several hours ahead of time to allow it to thicken.


So, I just cut the steak up in strips and put it on top of some lettuce...I guess just your favorite kind. Then I had black beans, tomatoes, avacado, red onion, cheese and fried corn tortilla strips to put on top of the salad. Then top it all with the cilantro dressing. I thought I had outdone myself tonight! Pretty easy and really good! So I looked at making that last night as well, but I opted for a quick salmon in the oven! I was wanting to try that one! I printed off 2 or 3 recipes to buy things for.

Megan..our stores in AZ double everyday. One of our stores, Bashas, doubles and sometimes triples up to a dollar. So I don't ever go to Walmart anymore since they just take coupons at face value and are not really making it easy to price match. I am addicted!!
